 Harvesting Indices of Vegetables: (Maturity indices) 

1) Spinach: Fully grown but tender & shining, 4 weeks after sowing. 

2) Fenugreek: Forty days after sowing, when still tender, older leaves become bitter in teste. 

3) Coriander: Fully grown & tender just before flowering, 15-20 cm height ( Coriandrum sativum )

 4) Brinjal: Fruit when becomes 2/3 of full size & just after it attains the characteristic colour of the variety. Fruits are glossy & bright. 

5) Tomato: Peel colour (breaker stage) & pulp colour change is important, Harvesting at different stages. i) Green mature stage: fully grown but green fruit for distant market. i) Red stage: Fruit colour changes from green to the development of red tinge for nearby market. i) Fully matured stage: Fully developed red & soft fruits for processing 

6) Chilli: Fully developed but green fruit for vegetables. Dried fruit & spices To break at once, ease of snapping, as brittle.

 7) Okra : Fully developed tender & soft, 45-50 days after planting. Picking be done at alternate day. Mature fruits are fibrous. 

8) Bitter gourd: Well developed but tender. Older fruit become fibrous & arange in colour, picking in alternate day. 

9) Ridge gourd: 1/3 "fully developed &tender, Harvesting 60 days after planting. 

10) Pumpkin: Fruit be harvested when fully developed but tender for vegetable. Colour changes from dark green to yellow or orange. Older fruit becomes fibrous. 

11) Watermelon: In the case of ripe fruit tendril near pedicle gets dried / withered. Dead sound/ hollow sound on thumping/tapping. Immature fruit gives metallic ringing sound. Highest T.S.S., sugars. Fruit portion near soil becomes white. Fruit pedicel gets round & soft. Days from anthessis decides harvesting. 

12) Muskmelon: Ease of separation from plant is important, Netting develops. Mature fruits gét separated from pedicel on slight pressure this is slip stage. This raiddle portion of the rind network becomes yellow. Typical fragrance also emanates from fruit. Highest sugar &T.S.S. The rind of ripe fruit yields little uni the pressure of the thumb. Days from anthesis are also important.
